If the egg is the most iconic food of Easter, then chocolate has to be second on the list. In 2018, experts forecasted that Americans would buy 90 million chocolate bunnies for the spring holiday. That year, the National Retail Federation also predicted that in the U.S., people would spend close to $2.5 billion on all types of Easter candy, including jelly beans, Peeps and of course, Cadbury creme eggs.
So, if you want to indulge your sweet tooth this Easter, but you don’t want to feel sick to your stomach or guilty on Easter Monday, try out this recipe for cannabis-infused, chocolate-dipped coconut macaroons.
And since this recipe doesn’t include flour, it’s also perfect for folks celebrating Passover. This holiday commemorates the Israelites’ freedom from slavery in Ancient Egypt. The story goes that when the Israelites left Egypt, they needed to do so quickly, and they didn’t have time to wait for their bread to rise. So, those observing Passover don’t eat leavened bread for the entirety of the holiday.
Of course, we added a cannabis tincture to this recipe as an easy and smoke-free way to medicate during whichever holiday you celebrate. Since the recipe makes around 25 macaroons, each one can be a perfect marijuana microdose.
A low dose of cannabinoids and terpenes can be just enough to feel good, while still being able to function and visit with family. Microdosing can be a great way to introduce cannabis to those who you know would benefit from the plant, but who are nervous about trying cannabis.
We’ve tried to keep this recipe light. So, you’ll see ingredients, like:
- Egg whites, which are high in protein, but contain no saturated fat, cholesterol or carbs. Egg whites are also high in potassium, which may help keep blood pressure stable, and riboflavin, also known as vitamin B2, which helps metabolism function properly.
- Coconut meat, which is high in fiber, helping keep you regular and stabilizing blood sugar. Coconuts are also a good source of iron, which helps keep energy levels high and supports the immune system.
- Dark chocolate, which contain antioxidants, supports heart health and may even support cognitive function.
- Cannabis, which depending on what kind of marijuana oil you choose, can help you sleep, relax, feel more social or relieve pain.
Ingredients for Cannabis-Infused, Chocolate-Dipped Coconut Macaroons
Makes about 25 macaroons
- 3 egg whites
- 2 1/2 cups sweetened coconut flakes
- 3/4 cup sugar
- 1 tsp vanilla extract
- 4 oz dark chocolate, broken into pieces
- 5 droppers of cannabis tincture of your choice (adjust amount for your desired effects and tolerance level, if needed)
How to Make Cannabis-Infused, Chocolate-Dipped Coconut Macaroons
- Preheat oven to 350 degrees F.
- Mix egg whites, sugar, vanilla and coconut together, making sure all ingredients are incorporated evenly.
- Line a baking sheet with parchment paper. You may need to use two baking sheets or bake in batches.
- Take a tablespoon or small ice cream scooper to measure out one spoonful of the mixture and place it onto the baking sheet; you can shape them into mounds or balls. Repeat until you use up all of the mixture, making sure to leave space between each mound.
- Bake for about 15 minutes, keeping an eye on the macaroons so that they don’t burn. Take them out of the oven when the tops turn golden brown.
- Let the macaroons cool (on a wire rack if possible). While they’re cooling, prepare your chocolate.
- Make a double boiler by filling a saucepan with about an inch of water and placing a Pyrex bowl on top of the saucepan. Once the water starts to boil, place your chocolate pieces in the bowl, mixing gently but constantly until the chocolate melts.
- When your chocolate is melted and smooth, using mitts or a towel, remove the bowl carefully from the saucepan.
- Add the cannabis to the chocolate, and stir in completely.
- Take each cooled macaroon and dip the top of the macaroon into the chocolate.
- Place the macaroons on a tray, and leave out until the chocolate is set. You can also put them in the fridge or freezer until the chocolate sets. Serve macaroons at room temperature.
